HARVESTING WITH THE HEART
At Entre Lunas, we begin with the careful selection of high quality agaves, which take 6 to 7 years to mature. This process ensures that each plant is ready for the jima, guaranteeing that it offers its best expression in flavor and aroma.
Our master mezcalero cuts the pineapples at their optimum point and cooks them in a conical stone oven for three days, changing their color from white to caramel and highlighting their natural sugars.
The cooked piñas are ground in a tahona or stone mill, a traditional method that preserves the essence of the agave. This process not only allows us to obtain a homogeneous blend, but also contributes to create more complex and authentic flavor profiles that make our mezcal unique.
The ground agave mixture is placed in wooden vats, where fermentation occurs naturally for 3 to 5 days. During this time, water and temperature play a crucial role in the transformation of sugars into alcohol, resulting in a rich and nuanced base.
Distillation is carried out in copper stills through a meticulous double distillation process that lasts 24 hours. This method not only guarantees a clean and refined mezcal, but also highlights the flavor nuances that characterize Entre Lunas, ensuring a unique tasting experience.
